Union cooks think 'forward' with vegetarian dishes

Child Nutrition managers from around the school district participated in a two-hour training session Wednesday afternoon making vegetarian dishes at Ellen Ochoa Elementary’s community kitchen with a trainer from the Humane Society.
Lauren Pitts, food and nutrition manager/registered dietitian at the Humane Society of the United States, travels around the country, working with chefs to show them create and fun vegetarians recipes.
Child Nutrition Manager Lisa Griffin, district chefs Mike Yip and Candace Walker Murray, and child nutrition managers from around the district prepared several dishes under her tutelage, including nutty noodles, “nacho cheez,” tropical tofu with pineapple and rice, and sweet sloppy joes with lentils.
